Fresh Picked Strawberry Pie


Meet Lauren and Ansley, our second cousins. Tiffany, their mom took them strawberry picking and she was so sweet to share their adventure and their strawberry pie recipe with us!


"We went to Ottawa Farms in Bloomingdale, GA. They have a Strawberry Festival coming up April 13-14th. The girls loved going and it’s a tradition of ours. As it was early in the season, we could actually see the flowers and the green berries still on many plants - awesome science lesson opportunity about how strawberries grow. The girls spent a lot of time looking for the perfect berries and we ended up with about 11 pounds in just 30 minutes! We made two pies and enjoyed the rest as snacks or sides with meals."





Fresh Picked Strawberry Pie


Ingredients

  • 1 refrigerated Pie Crust

  • 2 cup sliced Strawberries

  • 2 1/2 tbsp Cornstarch

  • 1 1/4 cup Sugar

  • 1 1/2 cup Water

  • 1 box (3 oz) Strawberry Gelatin (like Jell-O)


Instructions

  1. Preheat oven to 350.

  2. Place pie crust in pie pan and crimp edge.

  3. Use a fork to poke holes in bottom.

  4. Bake for 15-18 minutes or until edges are browned. Allow to cool.

  5. Layer bottom with the sliced strawberries.

  6. Stir together water sugar and cornstarch and bring to a boil.

  7. Simmer, stirring constantly, until thickened.

  8. Remove from heat, add Jell-O and stir until dissolved.

  9. Pour mixture over strawberries.

  10. Refrigerate until set. .....and of course we to our slices with whipped topping before eating!


Notes

How to make 1-step Homemade Whipped Cream: Add 1-16 oz. carton heavy whipping cream and 1- Tbs. sugar in a mixing bowl and whip on high until stiff peaks. Add additional sugar to taste.
